Wild Horseradish - Foraged Food Enhancer


Ah, spring is in the air. Time to get out in the fields for some foraging. Luckily, we have a location for gathering horseradish. The leaves were just getting ready ready to unfurl for gathering sunlight on the day we were collecting. Our experience has been that the later in the season, the stronger the root. And, our experience has also been that stronger does not equal more tasty. In fact, there have been pickings where the radishes were unfit for consumption. Not high on a survival food list, but beats starving.

We discuss doing the processing of the horseradish outdoors, and maintain that as the proper location. If you think onions can get the eyes watering, you haven't seen anything like what a pile of horseradish can do to clear out the house.
